Black Truffle & Herb Seasoning Mix

Truffles have a rich, earthy taste that’s savory and slightly sweet. Black truffles in particular are pungent with hints of garlic, shallots, and musky earthiness.

Black Truffle Steak Frites

Ingredients

  • Steak & Potatoes

  • 2 lbs. (1 kg) russet potatoes, about 4 large potatoes, cut into fries

  • 2 tbsp (30 mL) oil

  • 1½ tsp (7 mL) Black Truffle & Herb Seasoning Mix, divided

  • ½ tsp (2 mL) salt, divided

  • 2   boneless New York strip steaks, about 1–1½ lbs. (450–680 g)

  • Parmesan Truffle Butter

  • 3 tbsp (45 mL) butter, softened

  • ¼ oz. (10 g) Parmesan cheese, finely grated (2 tbsp/30 mL), plus additional for topping

  • 1 tbsp (15 mL) parsley, finely chopped, plus additional for topping

  • 1 tsp (5 mL) Black Truffle & Herb Seasoning Mix

  • Sauce

  • ¼ cup (60 mL) mayonnaise

  • ¼ cup (60 mL) sour cream or Greek yogurt

  • 1 tsp (5 mL) Black Truffle & Herb Seasoning MixDirections

  1. Place chicken, oil and rub in resealable plastic bag; knead bag to coat chicken.

  2. Spray (10-in.) Skillet with vegetable oil; heat over medium heat 1-3 minutes or until shimmering.  Add chicken and cook 7-9 minutes or until chicken is golden brown and no longer pink in center. Transfer to serving platter and serve.

Mashed Potatoes: Add ½ cup of broth or water to 3 cups of cubed potatoes and microwave, covered, until tender, about 8-10 minutes. Add 2-3 TBL of milk, 2 TBL of butter, and 1 TBL of seasoning mix. Mash until smooth.

Truffle Butter: Combine 1 stick of room-temperature unsalted butter with 2 tsp of seasoning mix. Use it to top cooked steak, spread on warm bread, or add a special touch to veggies.

One-Pat Pasta: Heat 1 TBL of oil in a medium saucepan. Add ½ a chopped onion and 8 oz. sliced baby portobello mushrooms. Cook over medium heat until softened and browned, about 6-8 minutes. Add 8 oz of dry pasta of your choice (like penne), 3 cups chicken or beef broth, and 1 TBL seasoning mix. Cook, covered, for 10-12 minutes, or until pasta is tender, stirring occasionally. Stir in 2 cups spinach and top with Parmesan cheese.

Sautéed Green Beans: Saute 4 cups of fresh green beans with 2 TBL of butter over medium heat for 7-8 minutes. Add 1 tsp of seasoning mix, stir and serve.
